FARRO WITH MUSHROOMS

This is a good home alone Sunday dinner. I still had some farro left over, so I made it sort of like risotto. Softened up some onions and garlic, added some mushrooms and rosemary. Browned it. Added the farro grains til they were crisp, then added chicken stock and cooked it for an hour and a half. Topped if off with some parsley and parmesan. It seems pretty healthy too.
