CATALAN EGGS
With Barcelona (and Blue Bottle Coffee/SF) still on my mind, I attempted to make Catalan eggs and kale for dinner. It turned out pretty good. Tomato sauce made by sauteing some onions in olive oil til they were sweet, poured in whole canned tomatoes, let it cook for a while. Cooked the kale in a little garlic with a few red pepper flakes. Topped it all with a fried egg and some parmesan.

ReplyDeleteActually, this is one of my staple dinners, minus the tomotoes, I'll try adding them. Not sure how you did the kale, but one variation is to add a few anchovies to olive oil, saute the kale, add lemon at the end. So good.
