I haven't done much grilling in my life, so I was a little nervous about making these expensive porterhouse steaks... especially since they were being served to honest 10-year old girls, who would have no problem telling me if it was too raw or burnt. We grilled in Mindy's back yard on a not too hot New York night. All of my America's Test Kitchen-watching paid off because these turned out great.
